Ingredients

  • 3 cups white cabbage (thinly sliced)
  • 3 cups red cabbage (thinly sliced)
  • 1 medium red bell pepper (cut into thin strips)
  • 1 medium carrot (julienne)
  • 1 cup sugar snap peas (chopped)
  • 1/2 cup toasted and chopped cashews
  • 4 tbsp sesame oil
  • 4 tbsp rice vinegar
  • 2 tbsp honey
  • 2 tbsp lime juice

Instructions

  1. Roast the cashews in a skillet over medium heat until golden brown. Let cool and chop.
  2. Wash and chop the vegetables; combine them in a large mixing bowl.
  3. Add toppings like cilantro and sesame seeds to the vegetable mix.
  4. In a jar, mix sesame oil, rice vinegar, honey, lime juice, salt, and pepper; shake well to combine.
  5. Just before serving, drizzle dressing over the salad and toss gently.
