  • 2 pounds boneless, skinless chicken breasts
  • 3 tablespoons avocado oil
  • 2 cups BBQ sauce (divided)
  • 8 cups thinly sliced romaine lettuce
  • 4 ears corn
  • 1 avocado (diced)
  • 1 can black beans (drained and rinsed)
  • Fresh herbs: cilantro and parsley

Instructions

  1. Prepare the chicken skewers by cutting chicken breasts into cubes and tossing them with avocado oil and kosher salt. Thread onto pre-soaked skewers and brush with half of the BBQ sauce.
  2. Grill the skewers over medium-high heat for 10-15 minutes, turning occasionally and brushing with remaining BBQ sauce until fully cooked.
  3. For the salad dressing, whisk together avocado oil, egg, coconut milk, lemon juice, red wine vinegar, garlic, dill, parsley, salt, onion powder, and pepper until smooth.
  4. In a large bowl, combine romaine lettuce, corn (cut from cobs), green onions, grape tomatoes, black beans, cilantro leaves, basil, and avocado. Drizzle with dressing and toss gently.
  5. Serve by placing the grilled chicken skewers atop the salad mixture.
