  • 2 lbs Beef Chuck Roast, cut into bite-sized pieces
  • 1 cup Red Wine (Pinot Noir or Burgundy)
  • 2 cups Low-Sodium Beef Broth
  • 8 oz Fresh Mushrooms (cremini or button)
  • 2 Carrots, chopped
  • 1 Onion, chopped
  • 4 slices Thick-Cut Bacon, diced
  • 2 tbsp Tomato Paste
  • Fresh Thyme and Bay Leaves

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large Dutch oven over medium heat, cook the diced bacon until crispy. Remove with a slotted spoon but keep the fat in the pot.
  3. Brown the beef chuck roast in batches until seared on all sides; set aside.
  4. Sauté chopped onions and carrots in the remaining fat for about five minutes. Add minced garlic and cook for an additional minute.
  5. Stir in tomato paste and mushrooms before returning the browned beef to the pot. Pour in red wine and beef broth until covered, adding thyme and bay leaves.
