- 3–4 pounds beef chuck roast
- 2 large sweet onions
- 4–5 cloves garlic
- 2 cups low-sodium beef broth
- 1 bottle (12 oz) dark beer (Belgian ale or stout)
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
Instructions
- Cut the beef chuck roast into 1-2 inch cubes and season with salt and pepper.
- In a skillet over medium-high heat, brown the beef on all sides for about 5-7 minutes. Transfer to a slow cooker.
- Sauté sliced onions in the same skillet until soft and caramelized (8-10 minutes). Add minced garlic during the last minute.
- Pour beer and beef broth into the slow cooker over the meat; add sautéed onions, garlic, and Dijon mustard. Stir well.
- Cover and cook on low for 6-8 hours or until the beef is incredibly tender.
