Ingredients
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- ⅓ cup light or dark brown sugar
- 1 egg
- 1 tbsp freeze-dried blueberry powder
- 2–4 tbsp blueberry jam
- Optional: food coloring (blue, green)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, baking soda, baking powder, and salt; whisk until blended.
- In another bowl, mix melted butter, granulated sugar, brown sugar, vanilla extract, and egg until smooth.
- Gradually add the dry mixture to the wet ingredients and stir until just combined.
- Fold in freeze-dried blueberry powder and blueberry jam evenly into the dough.
- If desired, mix in food coloring for added fun.
- Scoop spoonfuls of dough onto the prepared baking sheet with enough space between each cookie.
- Bake for approximately 11 minutes or until edges are lightly golden. Cool on the baking sheet for a few minutes before transferring to a wire rack.
