  • 24 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  2. In a large bowl, beat softened cream cheese until smooth. Mix in sour cream, sugar, and vanilla extract until creamy.
  3. Pour the cheesecake filling over the crust and bake for about 50-60 minutes until set at the edges but slightly jiggly in the center. Cool at room temperature before refrigerating.
  4. For the ganache, heat heavy cream until simmering, pour over chocolate chips, let sit for five minutes then stir until smooth.
  5. Once the cheesecake is cool, pour ganache over the top and spread evenly. Chill for another hour before serving.
