Ingredients
- 2 packages (6 ounces each) Driscolls Raspberries
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup orange juice
- 2 slices sourdough or French bread
- 2 tablespoons mayonnaise
- 2 ounces Brie cheese (about 4 tablespoons)
- 4 slices manchego cheese or white cheddar cheese
Instructions
- Prepare the Raspberry Compote: In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling for about 5 minutes. Reduce heat and stir occasionally for another 15–20 minutes until thickened. Set aside to cool.
- Assemble the Sandwich: Spread mayonnaise on one side of each slice of bread. Layer brie on the unbuttered side of one slice, top with raspberry compote and additional cheese slices. Place the other slice on top, mayonnaise side facing out.
