  • ½ teaspoon black pepper
  • 8 slices artisan bread (ciabatta, sourdough, or baguette)
  • 8 ounces burrata cheese (2 balls or 1 large ball)
  • 1 cup fresh basil leaves
  • 4 tablespoons balsamic glaze
  • Olive oil or softened butter, for toasting
  • 4 slices prosciutto
  • 1 cup arugula
  • 2 tablespoons pesto

Instructions

  1. Preheat oven to 375°F (190°C). In an oven-safe dish, mix halved cherry tomatoes, olive oil, garlic, oregano, red pepper flakes (if using), salt, and black pepper. Roast for about 30 minutes until soft.
  2. While tomatoes roast, heat a grill pan over medium heat. Brush one side of each bread slice with olive oil or softened butter and toast until golden brown.
  3. Spread pesto on toasted bread slices. Layer with basil leaves, burrata cheese, roasted tomatoes, prosciutto (if using), and arugula before topping with another slice of bread.
