- 3–4 boneless, skinless chicken breasts (about 600g)
- 1 can (400ml) full-fat coconut milk
- 1 tablespoon fresh ginger, grated
- 3 tablespoons low-sodium soy sauce
- 2 cloves garlic, minced
- Salt and pepper to taste
