Instructions

  1. In a large saucepan, heat olive oil over medium heat and sauté chopped onion and minced garlic until translucent (about 5 minutes).

  3. Gradually add chicken broth, one cup at a time, stirring until absorbed before adding more, until about 4 cups are used (approximately 20 minutes).
  4. Stir in fresh pumpkin puree and dried sage; mix well.
  5. Remove from heat and fold in crumbled goat cheese and freshly grated parmesan until melted.
  6. Serve warm, garnished with additional goat cheese or fresh sage if desired.
