Description

Soupe de Chou-Fleur is a comforting and creamy cauliflower soup that envelops you in warmth on chilly days. This delightful dish combines fresh cauliflower, aromatic garlic, and rich cream, making it the perfect meal for cozy family dinners or gatherings. Ingredients

  • 1 head of fresh cauliflower
  • 1 medium yellow onion
  • 3 cloves of garlic
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut milk)
  • Salt and pepper to taste

Instructions

  1. Wash and cut the cauliflower into florets.
  2. In a large pot, heat oil over medium heat and sauté diced onion and minced garlic until fragrant (about 3-4 minutes).
  3. Add cauliflower florets and sauté for another few minutes.
  4. Pour in enough vegetable broth to cover the vegetables, bring to a boil, then reduce heat and simmer for about 20 minutes until tender.
  5. Blend the mixture until smooth using an immersion blender or regular blender (let cool slightly if using the latter).
  6. Return to low heat, stir in cream or coconut milk, and season with salt and pepper.
