  • 3 lbs Yukon gold potatoes
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly cracked black pepper (to taste)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped fresh scallions (divided)
  • 2 tablespoons finely chopped fresh dill (divided)
  • 2 tablespoons finely chopped fresh parsley (divided)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice

Instructions

  1. Boil cubed Yukon gold potatoes in salted water until tender (12-16 minutes). Drain.
  2. Preheat oven to 400°F (200°C) and prepare a baking sheet with aluminum foil.
  3. Toss drained potatoes with olive oil, garlic powder, salt, and pepper.
  4. Spread seasoned potatoes on the baking sheet and roast for about 30 minutes until crispy, flipping halfway through.
  5. In a bowl, combine sour cream, mayonnaise, scallions, dill, parsley, Dijon mustard, lemon juice, salt, and pepper to make the dressing.
  6. Once roasted potatoes are ready and cooled slightly, toss them in the dressing just before serving.
