  • 45 medium Yukon Gold or Russet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 34 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 cups shredded sharp cheddar cheese
  • 8 oz cream cheese

Instructions

  1. Prepare the vegetables by peeling and dicing the potatoes into bite-sized pieces. Finely chop the onion and mince the garlic.
  2. In the crock pot, combine the diced potatoes, chopped onion, minced garlic, and vegetable broth. Stir well.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
  4. Once cooked, stir in shredded cheddar cheese and cream cheese until melted.
  5. For a smoother texture, use an immersion blender or regular blender to blend part of the soup (optional).
