  • 1/2 cup vanilla protein powder
  • 1 cup rolled oats
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 cup honey or maple syrup
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add eggs, honey (or maple syrup), and protein powder to the mashed bananas; mix well.
  4. In another bowl, combine oats and baking powder. Gradually fold into the wet mixture until just combined.
  5. If using, gently fold in chopped nuts or chocolate chips.
  6. Scoop batter into muffin tin, filling each cup about two-thirds full. Bake for 18-20 minutes or until golden brown.
