  • 5 Earl Grey tea bags
  • 240 ml whole milk
  • 110 g unsalted butter (room temperature)
  • 220 g sugar
  • 1 large egg (whisked)
  • 225 g plain flour (all-purpose)
  • 250 g frozen blackberries
  • 120 g caster sugar (superfine)
  • 225 g cream cheese (room temperature)

Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. Infuse warm milk with Earl Grey tea bags for 10 minutes, then cool.
  3. Cream together butter and sugar in a mixing bowl until fluffy. Add egg and vanilla; mix well.
  4. Gradually add cooled milk mixture to creamed mixture while stirring.
  5. Combine flour, baking powder, and salt; fold into wet ingredients until just mixed.
  6. Pour batter into liners and bake for about 20 minutes or until a toothpick comes out clean.
  7. While cooling, prepare blackberry curd by heating blackberries with water, lemon zest, and juice until broken down. Strain seeds and thicken mixture with whisked eggs, sugar, and cornflour on low heat; stir in butter until smooth.
  8. Fill cooled cupcakes with blackberry curd using a knife or corer.
  9. For frosting, beat cream cheese and butter until smooth; gradually mix in sifted icing sugar and vanilla until creamy.
  10. Frost each cupcake generously and garnish with fresh blackberries if desired.
