  • 6 cups lettuce (chopped)
  • 1 Greek marinated chicken breast (8 ounces)
  • 2 cups Mediterranean tomatoes (sliced)
  • 1 cup Persian cucumber (sliced)
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese (crumbled)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 clove garlic (minced)
  • 2 teaspoons oregano (dried)
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. If using pre-cooked chicken, slice it into bite-sized pieces. If using raw chicken, grill or pan-sear it until fully cooked (internal temperature of 165°F) and let rest before slicing.
  2. On your cutting board, chop the lettuce and slice the cucumber and tomatoes to your preference.
  3. In a large mixing bowl, combine the lettuce, cucumber, tomatoes, olives, and feta cheese.
  4. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, sugar, salt, and pepper until well blended.
  5. Pour the dressing over the salad mixture and toss gently before topping with sliced chicken.
