  • 12 oz rigatoni pasta
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. 1. Cook rigatoni in salted boiling water until al dente; reserve ½ cup of pasta water before draining.
  2. 2. In a skillet over medium-high heat, sauté the chicken in olive oil until golden brown. Remove from pan.
  3. 3. Melt butter in the skillet, add garlic, and sauté until fragrant. Pour in chicken broth and simmer.
  4. 4. Stir in heavy cream and allow to thicken slightly before adding Parmesan cheese until melted.
