  • ¼ pound bacon
  • 2 pounds boneless beef chuck
  • 4 sticks celery
  • 3 large carrots
  • 1 large onion
  • 4 cloves garlic
  • 2 large potatoes or parsnips
  • 1 (12 ounce) bottle Guinness
  • 4 cups low sodium chicken broth
  • 1½ cups self-rising flour
  • ¾ cup shredded Irish sharp cheddar

Instructions

  1. Cook the bacon in a large oven-safe pot over medium heat until crispy. Remove and set aside.
  2. Brown the seasoned beef in the bacon fat until browned; remove and set aside.
  3. Sauté onion, celery, and carrots in the same pot until soft; add garlic and tomato paste.
  4. Pour in Guinness and Worcestershire sauce; bring to simmer while scraping up browned bits.
  5. Return beef to the pot with chicken broth, bay leaf, and thyme; reduce heat and cover for 1.5 hours.
  6. Stir in diced potatoes or parsnips and turnip; simmer uncovered for another 30 minutes.
  7. Thicken the stew if needed using cornstarch slurry.
  8. Prepare dumpling dough by mixing flour and garlic powder; cut in shortening, then stir in cheese and milk.
  9. Form small dumplings on top of the stew; bake uncovered at 350°F for about 30-40 minutes until golden brown.
  10. Garnish with chopped parsley before serving warm.
