Ingredients
- 2 pounds red-skinned potatoes
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- Juice and zest of 1 lemon
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh thyme
- 2 tablespoons fresh dill
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/2 cup sliced red onion
- 1/4 cup chopped scallions
Instructions
- Boil the potatoes in a large pot of water until fork-tender (5-7 minutes). Drain and cool under cold water.
- Slice the cooled potatoes in half or quarter them for larger pieces.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, lemon juice and zest, half of the herbs, salt, and pepper until combined.
- In a mixing bowl, combine sliced potatoes, red onion, and scallions. Pour the dressing over the top and toss gently to coat. Garnish with remaining herbs.
- Serve at room temperature or chilled.
