  • ¾ cup whole wheat flour (or gluten-free flour)
  • 1½ tsp baking powder
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 2 tbsp melted coconut oil (or unsalted butter)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup pure maple syrup
  • 1 cup grated zucchini

Instructions

  1. In a medium bowl, whisk together instant oats, whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, mix melted coconut oil (or butter) with the egg and vanilla. Stir in maple syrup.
  3. Gradually combine the dry ingredients with the wet ingredients until just mixed. Fold in grated zucchini.
  4. Chill the dough for 30 minutes in the refrigerator.
  5. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  6. Scoop rounded tablespoons of dough onto the prepared sheet and flatten slightly.
  7. Bake for 11-14 minutes until golden around edges; cool on wire rack.
