Ingredients
- 1 cup instant oats
- ¾ cup whole wheat flour (or gluten-free flour)

- 2 tbsp melted coconut oil (or unsalted butter)
- 1 large egg
- 1 tsp vanilla extract
- ½ cup pure maple syrup
- 1 cup grated zucchini
Instructions
- In a medium bowl, whisk together instant oats, whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix melted coconut oil (or butter) with the egg and vanilla. Stir in maple syrup.
- Gradually combine the dry ingredients with the wet ingredients until just mixed. Fold in grated zucchini.
- Chill the dough for 30 minutes in the refrigerator.
- Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
- Scoop rounded tablespoons of dough onto the prepared sheet and flatten slightly.
- Bake for 11-14 minutes until golden around edges; cool on wire rack.
