- 3–4 boneless, skinless chicken breasts
- 1 medium onion
- 3 cloves garlic
- 2 bell peppers (red and green)
- 1 can diced tomatoes with green chilies
- 4 cups low-sodium chicken broth
- Olive oil

Instructions
- Heat two tablespoons of olive oil in a large pot over medium heat. Sauté chopped onion until translucent (about five minutes).
- Add minced garlic and diced bell peppers; sauté for another three minutes.
- Add boneless chicken breasts and cook until golden brown on both sides (approximately six minutes).
- Stir in cumin, chili powder, and canned tomatoes; mix well.
- Pour in four cups of chicken broth; bring to a boil, then reduce heat and simmer for about 20 minutes or until chicken is cooked through.
- Remove chicken, shred it using forks, and return to the pot. Serve hot with desired toppings.
