  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 tsp cinnamon (divided)
  • 16 oz cream cheese, softened
  • 3 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and half of the cinnamon sugar mixture; mix well and press into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Blend in the vanilla extract.
  4. Pour the cheesecake filling over the crust and sprinkle with remaining cinnamon sugar.
  5. Bake for 30-35 minutes until center is set but still slightly jiggly.
  6. Allow to cool completely before slicing into squares; chill in the refrigerator for best flavor before serving.
