  • 34 boneless, skinless chicken breasts
  • 8 oz fresh mushrooms (cremini or button)
  • 1 cup grated Asiago cheese
  • 1 cup heavy cream
  • 3 cloves minced garlic
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt, pepper, and dried herbs (thyme or parsley)

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for about 6 minutes on each side until golden brown and cooked through.
  2. Remove the chicken from the skillet and set aside. In the same skillet, sauté sliced mushrooms and minced garlic for about 5 minutes until browned.
  3. Pour in the chicken broth, simmer for 2 minutes, then add heavy cream. Stir until well combined.
  4. Gradually mix in the grated Asiago cheese until melted. Adjust seasonings as needed.
  5. Return the chicken to the skillet, spoon sauce over each piece, and serve with extra sauce drizzled on top.
