  • 45 medium russet potatoes, peeled and sliced
  • 1 lb kielbasa, cut into bite-sized pieces
  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 1 can cream of chicken soup
  • 1 packet onion soup mix
  • 1 cup milk

Instructions

  1. Peel and slice potatoes into thin rounds.
  2. In the crockpot, layer half of the sliced potatoes at the bottom. Top with half of the kielbasa and half of the cheese. Repeat with remaining ingredients.
  3. In a bowl, combine cream of chicken soup, milk, and onion soup mix until smooth. Pour over layered ingredients in the crockpot.
  4. Cover and cook on low for 6-7 hours until potatoes are tender.
  5. About 30 minutes before serving, sprinkle any remaining cheese on top to melt.
  6. Serve warm directly from the crockpot or transfer to plates.
