- 1 can black beans, drained and rinsed
- 1 cup fresh salsa
- 6 flour tortillas, cut into pieces
- 2 cups shredded cheese (cheddar and Monterey Jack)
- 1 cup sour cream
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- Heat olive oil in a skillet over medium heat. Cook seasoned chicken breasts for about 7-10 minutes per side until golden brown and fully cooked. Shred the chicken once cooled.
- In a large bowl, mix shredded chicken, black beans, salsa, and half of the cheese until well combined.
- Layer half of the tortilla pieces at the bottom of the baking dish. Spoon half of the chicken mixture over them, then repeat with remaining tortillas and filling. Top with dollops of sour cream and sprinkle remaining cheese.
