Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables
  • 3 large potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1 pie crust or puff pastry

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the diced onion until translucent, about 5 minutes.
  3. Add the ground beef to the skillet and cook until browned. Season with salt and pepper.
  4. Stir in the frozen mixed vegetables and cook until heated through.
  5. Boil the peeled potatoes in salted water until fork-tender; then drain and mash with butter, milk, salt, and pepper.
  6. Layer the beef mixture in the baking dish, top with mashed potatoes and shredded cheese. If using pie crust, place it over the filling.
  7. Bake for 25-30 minutes or until golden brown on top. Serve hot.
