Description

Irish Potato Bread is a heartwarming, traditional dish that combines creamy mashed potatoes with simple ingredients to create a soft, buttery loaf. This rustic bread boasts a delightful golden crust and a comforting aroma that fills your kitchen with warmth. Perfect for breakfast, lunch, or as a savory side, each slice melts in your mouth and brings a taste of Ireland right to your table.

Ingredients

Scale
  • 2 cups starchy potatoes (like Russets)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter (melted)
  • ½ cup whole milk

Instructions

  1. Boil and peel two cups of cubed potatoes in salted water for about 15 minutes until tender. Drain and mash until smooth, then let cool.
  2. In a large bowl, mix two cups of flour, one tablespoon of baking powder, and one teaspoon of salt. Fold in the mashed potatoes, three tablespoons of melted butter, and half a cup of milk.
  3. Knead the dough gently on a floured surface for about five minutes until smooth.
  4. Shape into a round loaf and place on a parchment-lined baking sheet. Score an 'X' on top for even cooking.
  5. Preheat the oven to 425°F (220°C) and bake for 30-35 minutes until golden brown.
