  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 ripe bananas, mashed
  • 1 cup whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of cupcake liners in a muffin tin.
  2. In another bowl, beat cream cheese and sugar until smooth. Add vanilla and mix well.
  3. Mash bananas until smooth and fold into the cream cheese mixture.
  4. Spoon the filling over each crust in the muffin tin until three-quarters full.
  5. Bake for 15-18 minutes or until set. Allow to cool at room temperature before refrigerating.
  6. Serve chilled topped with whipped topping or fresh banana slices.
