Description

Mini Crème Brûlée Cheesecakes are the perfect indulgence for any dessert lover.   • 1 cup graham crackers (finely crushed)
  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1/2 cup heavy cream
  • 2 large eggs (room temperature)

Instructions

  1. Preheat your oven to 325°F (165°C). Prepare a muffin tin with paper liners or grease it well.
  2. In a bowl, mix crushed graham crackers and melted butter until combined. Press firmly into each muffin liner to form the base.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Blend in vanilla extract and heavy cream, then add eggs one at a time, mixing until just combined.
  4. Pour the cheesecake mixture over the crusts in the muffin tin, filling almost to the top.
  5. Bake for 20-25 minutes until edges are set but centers jiggle slightly. Cool completely before refrigerating.
  6. Before serving, sprinkle an even layer of sugar on top of each cheesecake and caramelize using a kitchen torch or broiler until golden brown.
