Instructions
- Preheat your oven to 325°F (165°C). Prepare a muffin tin with paper liners or grease it well.
- In a bowl, mix crushed graham crackers and melted butter until combined. Press firmly into each muffin liner to form the base.
- In another bowl, beat softened cream cheese and sugar until smooth. Blend in vanilla extract and heavy cream, then add eggs one at a time, mixing until just combined.
- Pour the cheesecake mixture over the crusts in the muffin tin, filling almost to the top.
- Bake for 20-25 minutes until edges are set but centers jiggle slightly. Cool completely before refrigerating.
