Description

Mushroom Rice is a delightful dish that perfectly marries the earthy flavors of sautéed mushrooms and creamy Arborio rice. This comforting recipe is simple to prepare, making it ideal for busy weeknights or elegant gatherings. The combination of garlic and Parmesan adds depth, while the rich aroma will fill your kitchen with warmth and nostalgia. Each bite offers a satisfying texture that leaves you craving more. Serve it as a side or as a main dish paired with your favorite proteins or vegetables.

Ingredients

Scale
  • 1 cup Arborio rice
  • 8 ounces mixed fresh mushrooms (cremini and shiitake)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • ½ cup grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, add olive oil. Once hot, sauté the onions until translucent, then add garlic and stir for one minute.
  2. Add sliced mushrooms to the skillet; cook for about five minutes until golden brown.
  3. Stir in Arborio rice, ensuring each grain is coated in the mushroom mixture; sauté for two minutes.
  4. Gradually pour in one cup of vegetable broth while stirring continuously; allow it to absorb before adding more broth until four cups are used.
  5. Once the rice is tender yet al dente (about 18-20 minutes), remove from heat and mix in Parmesan cheese along with salt and pepper to taste.
  6. Spoon onto plates or into bowls; garnish with fresh herbs if desired.
