  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1 cup crispy bacon bits
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes clean and poke them several times with a fork.
  3. Bake the potatoes directly on the oven rack for about 45 minutes until tender.
  4. Allow them to cool slightly, then slice each potato in half lengthwise and scoop out most of the insides.
  5. Brush the potato halves with olive oil and season generously with salt.
  6. Place them upside down on a baking sheet and bake for an additional 15-20 minutes until golden brown and crispy.
  7. Remove from the oven, top each skin with cheddar cheese and bacon bits, then return to the oven for about 5 minutes until cheese is melted.
  8. Serve topped with sour cream and green onions.
