Description

Pumpkin Cheesecake Bars are a delectable autumn dessert that perfectly blends creamy pumpkin filling and a buttery graham cracker crust. Ingredients

  • Graham cracker crumbs
  • Unsalted butter
  • Pumpkin puree
  • Granulated sugar
  • Brown sugar
  • Cream cheese
  • Eggs
  • Cinnamon
  • Nutmeg
  • Vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. Mix graham cracker crumbs and melted butter in a bowl until sandy, then press firmly into the bottom of the prepared baking dish.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and brown sugar, mixing until blended. Stir in pumpkin puree, eggs one at a time, followed by cinnamon, nutmeg, and vanilla.
  4. Pour the filling over the crust and bake for 30-35 minutes until slightly jiggly in the center.
  5. Allow to cool completely before refrigerating for at least two hours. Slice into bars and serve with caramel sauce or whipped cream.
