Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 medium sweet potatoes
  • 2 cups fresh kale
  • 1 cup brown rice
  • 2 tablespoons olive oil
  • Garlic powder, salt, and pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the chicken breasts dry and season both sides with salt, pepper, and garlic powder. Place on one side of the baking sheet.
  3. Peel and dice sweet potatoes into bite-sized chunks. Toss them in olive oil with salt and pepper; spread on the other side of the baking sheet.
  4. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are tender.
  5. Cook brown rice according to package instructions while the chicken and potatoes roast.
  6. In a pan over medium heat, sauté chopped kale in olive oil for about five minutes until wilted; season lightly with salt.
  7. Serve rice topped with roasted chicken slices, sweet potatoes, and sautéed kale.
