  • 1 pound elbow macaroni
  • 3 cups shredded sharp cheddar cheese
  • 2 cups shredded smoked gouda cheese
  • 4 cups whole milk
  • ½ cup butter
  • ½ cup all-purpose flour

  • Salt & pepper to taste

Instructions

  1. Preheat your smoker or grill to 225°F (107°C).
  2. Cook elbow macaroni in salted boiling water until al dente; drain well.
  3. In a separate pot, melt butter over medium heat. Whisk in flour until smooth.
  4. Gradually add milk while stirring, cooking until thickened.
  5. Stir in cheddar and smoked gouda until melted; mix in mustard powder.
  6. Combine cooked pasta with the cheese sauce and transfer to an aluminum foil pan.
  7. Smoke for about one hour until bubbly and slightly crispy on top.
