  • 34 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 8 oz full-fat cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Season the chicken breasts with salt and pepper; place them in the dish.
  3. In a bowl, mix softened cream cheese with garlic powder and onion powder until smooth. Fold in spinach and half of the mozzarella cheese.
  4. Spread the spinach mixture over the chicken and sprinkle the remaining mozzarella on top.
  5. Pour chicken broth around the casserole (not over), cover with foil, and bake for 30-35 minutes until golden brown.
