  • 1/4 cup tahini
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil

  • 1/2 teaspoon ground cumin

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes, toss them with olive oil, and spread them on a baking sheet. Roast for 25-30 minutes or until tender.
  2. While the sweet potatoes cool, gather tahini, garlic, lemon juice, salt, and cumin.
  3. In a food processor, combine the roasted sweet potatoes with tahini, garlic, lemon juice, salt, and cumin. Blend until smooth.
  4. Adjust the consistency by adding water or extra olive oil as needed.
