Ingredients

  • Salmon fillets
  • Sushi rice
  • Low-sodium soy sauce
  • Brown sugar
  • Rice vinegar
  • Sesame oil
  • Green onions
  • Fresh vegetables (cucumbers, carrots)
  • Toasted sesame seeds for garnish

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water (1 cup rice to 1.25 cups water) in a pot, bring to a boil, reduce heat, and simmer covered for 15 minutes.
  2. In a saucepan, mix soy sauce, brown sugar, sesame oil, and rice vinegar over medium heat until dissolved and slightly thickened (about 5 minutes).
  3. Marinate salmon fillets in half the teriyaki sauce for 10-15 minutes.
  4. Heat oil in an oven-safe skillet over medium-high heat. Sear salmon skin-side down for 4 minutes; flip and bake at 400°F (200°C) for 6 minutes or until cooked through.
  5. Fluff rice and divide among bowls. Top with salmon, sliced veggies, drizzle remaining teriyaki sauce, and garnish with green onions and sesame seeds.
