Ingredients

  • Tortilla chips
  • Shredded Monterey Jack and cheddar cheese
  • Enchilada sauce (homemade or store-bought)
  • Black beans
  • Diced tomatoes
  • Sour cream and chopped cilantro (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a large baking dish with nonstick cooking spray.
  2. Spread half of the tortilla chips in the bottom of the baking dish. Layer half of the shredded cheese, black beans, and diced tomatoes on top. Pour half of the enchilada sauce over these layers.
  3. Repeat layering with remaining tortilla chips, cheese, black beans, tomatoes, and enchilada sauce.
  4. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown and bubbly.
  5. Let cool slightly before serving with sour cream and cilantro on top.
