Ingredients
- 2 lamb shanks (about 2.5 lbs)
- 1.5 cups long-grain basmati rice
- Olive oil
- Coriander seeds
- Cumin seeds
- Cloves
- Black pepper
- Cardamom pods
- Cinnamon stick
- Turmeric
- 1 small onion
- Salt
- Dried lemon (or lime)
- Bay leaves
Instructions
- Heat olive oil in a large pot over medium heat. Sauté sliced onions until caramelized.
- Add spices: coriander seeds, cumin seeds, cloves, black pepper, cardamom pods, cinnamon stick, turmeric, and salt; stir until fragrant.
- Add lamb shanks and cover with water. Bring to a boil; reduce heat and simmer for about 90 minutes or until tender.
- Remove lamb; strain broth into a separate container. Measure out 3 cups of broth for cooking rice.
- In the same pot, add basmati rice, dried lemon, bay leaves, and additional salt to the reserved broth. Bring to a boil then reduce heat; cover and cook until the rice is fluffy.
- Fluff rice gently; serve lamb on top of rice with caramelized onions and optional nuts or dried fruits as garnish.
