  • 2 heads of cauliflower (cut into small florets)
  • 6 slices of bacon (chopped)
  • 1/3 cup ranch dressing
  • 1/3 cup shredded sharp cheddar cheese
  • 4 green onions (sliced thinly)
  • Garlic powder and black pepper for seasoning

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium-high heat, cook the chopped bacon until crispy. Transfer it to a paper towel-lined plate, reserving some grease.
  3. In a large bowl, toss the cauliflower florets with reserved bacon grease, garlic powder, and black pepper.
  4. Spread the mixture on the baking sheet in a single layer and roast for 18-22 minutes, flipping halfway.
  5. Sprinkle shredded cheddar cheese over the cauliflower and return to the oven for an additional 2-3 minutes until melted.
