Ingredients
- 1½ cups Arborio rice
- 6 cups water (or 5 cups water and 1 cup white wine)
- 1½ lbs lobster shells (or fresh lobster tails)
- 4 cups lobster stock
- 2 Tbsp butter
- 2 Tbsp mascarpone cheese
- ¼ cup dry white wine
- Fresh chives and Parmigiano cheese for garnish
Instructions
- Prepare the lobster stock by simmering lobster shells with water, onion, carrot, celery, tomato, bay leaf, salt, and pepper for one hour. Strain and set aside.
- In a heavy-bottomed pot, sauté minced shallots and garlic in olive oil until fragrant.
