Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup warm water (about 110°F)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil (plus more for drizzling)
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • Fresh basil leaves for garnish
  • Coarse sea salt for topping

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a small bowl; let sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, mix flour and salt. Create a well in the center, add the yeast mixture and olive oil; stir until dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a towel, and let rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat the oven to 425°F (220°C). Punch down the dough and spread onto a lined baking sheet; use fingers to create dimples.
  6. Top with cherry tomatoes, mozzarella, drizzle with olive oil, and sprinkle with coarse sea salt.
  7. Let rest for another 20 minutes before baking in the preheated oven for 20-25 minutes until golden brown.
  8. Allow cooling slightly before garnishing with fresh basil leaves; slice to serve.
