- 3–4 garlic cloves (minced)
- 2 tablespoons olive oil

- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 teaspoon chili powder
- 2 cups cooked rice or quinoa
- Mixed vegetables (bell peppers, broccoli, snap peas)
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- In a bowl, whisk together lime juice, minced garlic, olive oil, salt, pepper, soy sauce, honey, and chili powder until combined.
