Ingredients
- 8 large lemons (sliced)
- 10 sprigs fresh mint
- 2 sprigs fresh rosemary
- 1 cup Sucanat (or preferred sweetener)
- 1/2 vanilla bean (scraped) or 2 tsp vanilla extract
- 8 cups cold water
- Ice
Instructions
- Place a medium mesh strainer over a bowl.
- Scrape the seeds from the vanilla bean into a small bowl.
- In the strainer, combine lemon slices, Sucanat, mint, rosemary, vanilla seeds, and the vanilla pod.
- Gently massage the lemons to release their juices.
- Cover with plastic wrap and refrigerate for at least 3-4 hours or overnight.
- After infusing, massage the lemons again to extract more juice. Strain out solids.
- Pour the concentrated juice into a pitcher and mix with 8 cups of cold water.
- Serve over ice in mason jars or tall glasses, garnished with extra rosemary.
