Ingredients
- 2 cups quick oats
- 2/3 cup all-purpose flour
- 2 tbsp cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup packed brown sugar
- 1/2 cup melted butter (slightly cooled)
- 1 large egg
- 2 tsp vanilla extract
- 1 1/2 cups grated zucchini
- 1 1/2 cups semi-sweet chocolate chips (divided)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine quick oats, flour, cocoa powder, baking soda, salt, cinnamon, and brown sugar.
- In another bowl, whisk together melted butter, egg, and vanilla extract.
- Pour the wet mixture into the dry ingredients along with grated zucchini and 1 cup of chocolate chips; stir until combined.
- Drop rounded tablespoons of dough onto parchment-lined baking sheets and slightly flatten each cookie.
- Press additional chocolate chips onto the tops of the cookies.
- Bake for 12–15 minutes until edges are lightly browned and centers appear set.
- Allow cooling on the baking sheets for a few minutes before transferring to wire racks.
