Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tin with liners.

  3. Stir in grated zucchini and drained pineapple until well combined.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. Gently fold in chopped walnuts.
  7. Fill each muffin cup about 3/4 full with batter.
  8. Bake for 18 to 22 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.
