  • 1 lb ribeye steak (or sirloin)
  • 2 tsp vegetable oil
  • 1 tbsp oyster sauce
  • 1 tbsp palm sugar
  • 1 tbsp lime juice
  • 1 tbsp tamarind pulp
  • 1 tsp uncooked glutinous rice
  • 1 tbsp fish sauce
  • 2 tsp garlic (minced)

Instructions

  1. Marinate the steak: In a bowl, combine vegetable oil, oyster sauce, palm sugar, lime juice, soy sauce, and minced garlic. Coat the steak evenly and let it rest for at least 15 minutes.
  2. Prepare the tamarind paste by dissolving tamarind pulp in boiling water. Strain to remove seeds.
  3. Toast glutinous rice in a dry pan until lightly browned, then grind into a fine powder.
  4. Mix the tamarind paste with ground rice powder and remaining dipping sauce ingredients.
  5. Heat oil in a cast-iron skillet over medium-high heat and sear the marinated steak for about 3-4 minutes per side.
  6. Allow steaks to rest for 10 minutes before slicing against the grain and serving with dipping sauce.
