Ingredients

  • Carrots
  • Celery
  • Onion
  • Garlic
  • Zucchini
  • Diced tomatoes
  • Fresh basil and thyme
  • Vegetable broth

Instructions

  1. Chop all vegetables: carrots, celery, onion, and zucchini.
  2. In a large pot over medium heat, add two tablespoons of olive oil. Sauté onions and garlic until fragrant (about 2 minutes).
  3. Add chopped carrots and celery; cook for 5 minutes until slightly tender.
  4. Pour in diced tomatoes with juices and vegetable broth (4 cups). Stir well.
  5. Add fresh basil and thyme; let simmer on low heat for 20 minutes.
  6. In the last 5 minutes, stir in zucchini to keep it crisp.
