Ingredients
- 9 Roma tomatoes
- 3 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- 1 yellow onion
- 4 garlic cloves
- 1 tbsp fresh thyme
- 1 tsp Kosher salt
- ½ tsp black pepper
- 1 can San Marzano tomatoes (28 oz)
- 1 cup fresh basil
- 1 tbsp sugar
- 2 cups chicken stock
- 2/3 cup heavy cream
Instructions
- Preheat the oven to 375°F.
- Place halved Roma tomatoes on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for about 1 hour until caramelized.
- In a large pot, melt butter and remaining olive oil over medium-high heat. Sauté diced onion for about 5 minutes until soft. Add minced garlic and thyme; sauté for another minute.
- Stir in crushed San Marzano tomatoes, chopped basil, and sugar; simmer for 10 minutes.
- Add roasted tomatoes and chicken stock; simmer for an additional 30 minutes.
- Blend the soup using an immersion blender until smooth. Stir in heavy cream.
- Optionally, prepare mini croutons by tossing bread cubes with olive oil and baking until golden brown.
- Serve hot, garnished with croutons.
