  • 34 boneless, skinless chicken breasts
  • 2 bell peppers (red and yellow)
  • 1 medium onion (sliced)
  • 4 flour tortillas
  • 1 cup shredded Monterey Jack and Cheddar cheese

Instructions

  1. Preheat a skillet over medium-high heat; add a splash of olive oil.

  3. Cook chicken for 6-7 minutes per side until golden brown; set aside.
  4. Sauté sliced bell peppers and onions in the same skillet for about 5 minutes until tender.

  6. Cook folded quesadillas in the skillet for 2-3 minutes per side until crispy and golden.
